As we wait for our own whiskey to mature, we embarked on a journey of discovery, sourcing mature whiskeys, exceptional finishing casks and attempting to create flavours not seen before in Irish Whiskey.
Inspired by Galway’s two great distilling traditions, the illicit Connemara fuisce(poitín) makers and the historic legal distilleries of Galway City, tied together by the ingredients they used.
We are bringing their 170 years of craft knowledge and resourcefulness to the whiskey category, creating exceptional Irish Whiskey with diverse flavour and distinct character.
Micil Inverin Small Batch
A five-part peated blend with a triple cask finish. Inspired by Micil’s rich distilling heritage, it embodies the fruit spice of the finest Connemara ‘fuisce’ and the peat smoke of the illicit stills and kilns of Inverin.
Micil Inverin Small Batch has great balance of peat and charred wood smoke. Filled with baked apples and pears, an abundance of vanilla and honey sweetness, along with pink peppercorn spice, and a lingering smoked bacon and clove spice finish.
Micil Earls Island Single Pot Still Irish whiskey
A fruity spicy Single Pot Still Irish whiskey enriched by bordeaux red wine casks, with hints of soft turf smoke from ex-peated whisky casks. It pays homage to the great Galway Distilleries of the past, and to the Latin wine merchants of old who made the city their home.
Micil Earls Island has wondrous spice notes, full of boiled sweets, apple drops, touches of maraschino cherries, slightly tart redcurrants and rhubarb. There’s copiuos spice, cinnamon and nutmeg, along with marzipan and toasted notes. Delightfully moreish.
