Micil Irish Whiskey

In 2020 we commenced whiskey production at Micil, laying down Galway’s first legal spirit in over a century. While our own whiskey matures we’ve released a series of Micil Whiskeys, using spirit sourced, finished and independently bottled by Micil, and inspired by the historical ‘fuisce’ distilling traditions of Galway City and Connemara. Finished in our own casks, these whiskeys reflect the style of ‘Galway Whiskey’ that we’re reviving at Micil, and are a small taste of what’s to come.

Micil Inverin Small Batch

46% ABV 700ML

A five-part peated blend with a triple cask finish. Inspired by Micil’s rich distilling heritage, it embodies the fruity spice of the finest Connemara ‘fuisce’ and the peat smoke of the illicit stills and kilns of Inverin.

Exceptional Because

Finished in recharred ex-bourbon quarter casks, Pedro Ximenez casks & Micil peated poitín octaves, imparting a hint of sweet, smoky turf from our family land in Connemara.

Tasting Notes

Micil Inverin Small Batch has great balance of peat and charred wood smoke. Full of baked apples and pears, an abundance of vanilla and honey sweetness, along with pink peppercorn spice, and a lingering smoked bacon and clove spice finish.

Micil Earls Island

46% ABV 700ML

A fruity, spicy Single Pot Still Irish whiskey enriched by Bordeaux red wine casks, with hints of soft turf smoke from ex-peated whiskey casks. It pays homage to the great Galway distilleries of the past, and to the Latin wine merchants of old who made the city their home.

Exceptional Because

The red wine finish from the ex-Bordeaux casks imparts an incredible depth of rich fruit and spice to the spirit, enhancing the soft spice and ripe barley character of the pot still whiskey.

Tasting Notes

Micil Earls Island has wondrous spice notes, full of boiled sweets, apple drops, touches of maraschino cherries and slightly tart redcurrants and rhubarb. There’s copious spice, cinnamon and nutmeg, along with marzipan and toasted nuts. Delightfully moreish.

Micil Madeira Island

46% ABV 700ML

A rich, spicy Single Pot Still Irish Whiskey that has sweet, crisp, dark and stone fruit notes from a Madeira wine cask finish. Ex-peated quarter casks lend their distinct gentle turf smoke, evoking the sweet, subtle peat of the finest Connemara fuisce. Inspired by the Galway distilleries of the past, and the city’s historical trade links with France, Spain and Portugal.

The Madeira wine cask influence lends progressive fruit and spice notes, reimagining the flavour profile of young pot still Irish whiskeys, and enhancing the depth and diversity of the Micil Pot Still Irish Whiskey range.

Tasting Notes

Micil Madeira Island has light sweet peat smoke surrounded by citrus peels and distinct spice notes like cinnamon, clove oils and nutmeg. Textural and flavoursome with candied orange sweets, milk chocolate, and undertones of grapefruit, apricots and nutty pot still spices.
