50ml Micil Irish Poitín
25ml Lemon Juice
15ml Sugar Syrup
1 Egg White
Shaken Cocktail.
Combine all the ingredients in a cocktail shaker. Dry shake without ice first, to aerate the egg whites. Then fill the shaker with ice and shake vigorously again.
Double Strain into your chosen glass, with or without ice. Garnish with a lemon twist and add a few drops of bitters to taste.
A spicy, full-flavoured poitín made to an original family recipe, distilled using 100% Irish malted barley and a local Connemara botanical known as bogbean.
