Rested for just 10 weeks in an Amontillado sherry cask, the maximum permitted while remaining true to the historic character of the spirit. It honours the methods once used by Connemara distillers to store and conceal their poitín in wood.

The short cask rest brings remarkable depth without losing the vibrant soul of the spirit. Layers of toasted almond, dried fruit, warm spice, and delicate oak emerge alongside poitín’s signature freshness and intensity, creating a spirit that is both boldly traditional and strikingly refined!
